But the truth is that simple isn’t always easy—especially when you’re baking fish. And you’re certainly not going to get a dish that looks like the ones you’ll find in restaurant kitchens!

Baked fish is easy and really good. It’s also an excellent technique for teaching kids about the benefits of nutrition and healthy cooking. This fish is baked in a foil pan on the grill to seal in the natural moisture, which keeps the fish moist(er) and keeps the fish from sticking to the pan. In all the Great Lakes states, including our home state of Wisconsin, people love a good fish fry. But fried fish is a tasty option to transform your freshwater catch that is often overlooked, and frankly, seriously underrated. If you have a bag of fish or nice walleye fillets, we have a quick and delicious recipe to prepare your catch and add to your kitchen arsenal. Route description First, preheat oven to 375° F. Rinse skinless fillets (fresh or thawed) under cold water, pat dry with paper towels, and place in a 9×13 glass baking dish or on a foil-lined baking sheet. Now the fun part begins, because you can customize the recipe by adding spices to your own taste. From Creole to Cajun to Southwestern to citrus and pepper, you can customize this basic recipe. We’ve included our favorite dishes in this version, but feel free to improvise. Just sprinkle the herbs over the fish fillets, with : Lemon pepper Garlic powder Onion powder Squeeze fresh lemon juice Creole spice powder (or your favorite spice) Salt and ground pepper to taste. (Note that many spice blends contain salt, so keep that in mind before adding them to a dish). Up here: 2-4 tablespoons butter (cut into pieces, put on the fish) Slice half of the yellow onion and place on top of the seasoned fillets. For a full pan of fish or smaller, thinner fillets, a cooking time of about 15 minutes is recommended. For walleye or larger, thicker fillets, it is recommended to wait about 25 minutes. It is not necessary to turn the fillets during cooking. The fish is done when the flesh can be easily removed with a fork. A tip from the kitchen: Omit the lemon pepper and use lime instead of lemon, sprinkle liberally with Chipolte Southwestern Spice Mix and use the cooked fish in fish tacos.
