Home cooking has become very popular in recent months, and learning to cook in small kitchens is in high demand, as are some great recipe ideas for the camper. Many RVers assume they have to fall back on their frozen meals or fast food like chips and pizza, but there are RV cookbooks on the market that prove this is simply not the case.

We provide cooking in your RV or at the campground with recipes for breakfast, lunch, dinner and dessert.  We recently spoke with Melisa Kennedy, who just launched her new quick RV recipe book, RV Tables, in which she easily incorporates all kinds of recipes; 21 quick RV recipes in fact.

RV Camping Food Checklist

Camping is about rest and relaxation, not about searching for missing ingredients at the nearest corner store – which, depending on where you’re camping, may not be entirely convenient. The key to a trouble-free motorhome trip? Meal planning.

According to Melisa Kennedy, there are a few basics you need for an RV weekend.  Adjust the amounts to the number of people.  Melisa based this on the fact that the couple traveled together for a three-day weekend in an RV.

Here’s their proposal:

Products

-1 pack of strawberries 1 pack of baby spinach 3 seed potatoes 1 satellite tomato 3 medium red onions 1 small head of garlic 3 peppers (red or green) 1 bag of 500 g carrots 1 head of celery

Dairy products

1 pint 2% organic milk
-1 dozen eggs
-1 packet good organic Irish butter
-1 packet mozzarella slices
-1 packet cheddar strips

Meat

-1 pound sliced turkey breast
-1 packet bacon, preferably ground beef
-1 pound
-2 pounds chicken breast

Dry Packaged Products

-1 one-pound pack of pasta, preferably ziti
-1 9-day pack of whole wheat muffins
-1 bread of choice

Camper Menu and Recipe Ideas

When planning a meal, think about recipes that can be served at any time – breakfast, lunch or dinner.  We love egg dishes because of their versatility.

Whether you plan to cook your breakfast on a campfire or in an RV, eggs are one of the quickest and easiest ingredients to use.

Tear it down or don’t have much room in the fridge?  Eggs are your answer!

Since the eggs are the only ingredient in these breakfast recipes that need to stay refrigerated, you can put them in the fridge if you want and pack the rest with the rest of your camping gear.  If you want to add more protein to your breakfast, try dried meats like chorizo.  It is the perfect meat to accompany an egg dish, as it has a lot of flavor and does not need to be refrigerated.

Fresh herbs, potatoes, onions and peppers are also easy to incorporate into your camping breakfast menu.

Melisa’s Fresh Grass Omelette

Ingredients:

  • 4 large or very large eggs
  • Salt and freshly ground pepper
  • 1 tablespoon plus 1 teaspoon milk
  • 3 tablespoons of chopped herbs: e.g. parsley, dill, chives, rosemary, basil or mint (do not use more than 3)
  • 1 tablespoon plus 1 teaspoon Irish quality oil

Directions:

Break the eggs into a bowl and beat with a fork or whisk until frothy. Season with salt and freshly ground pepper and add 2 teaspoons of milk. Beat half the vegetables with the eggs and mix well.

Heat an 8-inch non-stick omelet pan over medium-high heat. Add 2 teaspoons of pure Kerry Gold Irish oil. When the oil is hot, pour in the eggs by hand and scrape everything into the pan. Rotate the pan to distribute the eggs evenly across the surface. Fold the cooked omelet onto itself and serve.

Turkey Panini

Place this sandwich on the grill (or eat it cold).  This simple and easy sandwich will make you feel like you’re in an Italian restaurant.

Ingredients:

  • ¼ pound of good meat turkey
  • 1 tablespoon mayonnaise
  • 2 slices mozzarella

Spread both slices of bread with mayonnaise, place two slices of mozzarella on one side and ¼ pound of good turkey on the other.  Add other ingredients to taste, for example. B. Tomatoes and lettuce.

RV Gourmet Camping Ideas

While these recipes are ideal for a weekend or a long vacation in an RV, they may not be suitable for a campfire. They are actually designed to be prepared at home with a full kitchen.

Cake bags in moulds

These homemade cakes can be made at home and brought to the cart.  They go straight from the freezer to the oven to be baked. Place on a baking sheet if frozen, then reheat and serve on the campsite.

Ingredients:

  • 2 pounds of chicken
  • 1 cup hacked zwiebeln, roasted paprika and carots
  • 1 1 du bou chicken
  • Pastry
  • ½ cup of flour

Directions:

  1. Put the chicken in the pan and add water until just covered. Bring to a boil, reduce heat to low and simmer for 50 minutes. Remove the chicken to cool and continue to cook the broth to reduce and concentrate to about 1 quart. Remove the meat from the chicken and shred it.
  2. For the filling, melt the butter in a medium hot pan and add the onion, celery and carrots. Safely, over medium-high heat, for 2 to 3 minutes. Stir in salt and flour and cook for another 1 minute.
  3. Preheat the oven to 375 degrees Fahrenheit. Butter or parchment paper.
  4. To make pouches, take half a disk of dough at a time and spread it out on a floured surface. Using an inverted bowl (with a diameter of about 5 cm), cut 3 circles from each piece of dough. Once all the circles are cut out, gather up all the leftover dough, rinse it again and cut it out one last time. Place 1/4 cup of the filling on one side of the dough circle. Moisten the edges of the dough with water. Fold the dough into a semicircle. Press the edges of the dough together. Trim the edge with a fork. Repeat until all the filling is used. Pocket cakes can be frozen.
  5. Place the pocket cakes on the prepared baking sheet and let them cool for a few minutes. Prick the top of each cake twice with a fork.
  6. When ready to cook, beat the egg with 1 tablespoon of water. Brush each pocket cake with the egg.
  7. Bake for 20-25 minutes, until golden brown.

Domestic kitchen appliances

At this time of year, it’s not surprising that people are planning their next RV trip somewhere warm and sunny.  So maybe you’re thinking of preparing something to eat outside. Here you can find our kitchenware.

What to bring for outdoor cooking

  1. Cool box – A cool box is essential for any RV or kitchen. In fact, two coolers would be even better than one.  It’s a good idea to have a refrigerator for drinks, snacks, and other things your family needs often. Then reserve the other fridge for special meal ingredients and don’t leave it too open, or it will quickly lose its effectiveness. A well-insulated cooler that stays closed most of the time will keep ice and food cold for days.
  2. Grill – What will be the heat source for cooking? Many campgrounds have barbecues, but check the campground facilities or ask about them when booking an RV site.  If yours doesn’t have one, consider taking it.  Not only does it keep your RV warm during the summer months, but it’s also a great way to cook!
  3. Cast Iron Casserole – This durable skillet will be your most reliable companion in the outdoor kitchen of a campground or even in the kitchen of an RV.
  4. Aluminum Foil – You can never have too much sturdy aluminum foil in a camping or RV kitchen.  It can be used for many recipes and also to minimize cleaning time.  It’s a win-win situation.

RV Menu Planner

Some quick meals that require no refrigeration are good for planning your RV menu.  Because RV refrigerators are so small, it’s usually best to use other food items.

Here are some meal plans that don’t require a refrigerator:

  • Oatmeal
  • Canned tuna, chicken or ham for a light source of protein.
  • Beef or other dried and dehydrated meat.
  • Energy, protein or muesli bar
  • Pasta, lentils, beans and other dry grains and legumes for cooking.

When planning your camping menu, you would do well to include the foods listed above to provide a solid foundation for your camping nutrition. If you want, you can make the menu even more creative. For example, you can put your breakfast like oatmeal or granola bars on the shelf.  These are great additions if you don’t have time to cook a whole meal.

If you don’t mind processed foods, you can also limit yourself to dry, packaged foods that don’t require refrigeration, such as B. Toasties, donuts and other treats are a snap.

Of course we want to eat as much healthy food as possible when we’re in the RV, but we also want to be realistic.  You can find plenty of relatively healthy, well put together meal kits that only require water or a microwave. Not only are they convenient, but they can be incredibly delicious!

How to eat healthy at the campsite

PRO TIP :  Grab most of the food on the bus before you leave, says Melisa Kennedy.  Familiarise yourself with your campsite and your destination, then find a local health food store or supermarket and call ahead to make sure it is open when you arrive at your campsite.

Some people need to eat healthy in an RV:

  1. Pack of peanut butter for a quick sandwich or to top up.  If you are allergic to nuts, do not prepare this recipe, of course!
    1. Prepare dried fruit blends and pack them in pouches that can accompany you and your family on hikes and trips to your destination.
    2. Last but not least: When planning your RV menu, keep PROTEIN in mind!  The more protein you eat and the fewer carbs, the healthier your diet should be when RVing.  Choose lean meat and add a vegetarian side dish.
